You can set email addresses that should always receive copies of your sent mail (either as CC visible for all recipients, or BCC not visible for other recipients) in the Defaults section of the mail account editor (Edit ▸ Preferences ▸ Mail Accounts ▸ Edit ▸ Defaults).
